Science behind A2 milk.

Milk is a great source of calcium and protein. Casein is the largest group of proteins found in milk which makes up about 80% of the total protein content. A2 cows are the earlier breeds of cows that produce this protein in their milk along with an amino acid called proline. In the new hybrid breeds, the proline amino acid got converted to Histidine due to alteration of genes over the years. These are the A1 cows that include breeds like Holstein, Friesian and Ayrshire.

Proline is strongly bonded to a small protein called BCM 7, which prevents it from getting into the milk produced by A2 cows. On the other hand, Histidine holds a weak bond with BCM 7, so it is easily released in the GI tract of animals and can enter the human body on consumption of milk from A1 cows and interact with the digestive system and internal organs.

Difference between A1 & A2 milk

The protein component in milk is made up of up to 80% casein

Milk has several types of casein and beta casein is the second most common type casein in cow’s milk. Beta-casein comes in 12 different forms

1000s of years of genetic mutations has caused 12 different variations of β casein exist. Of those 12, 3 are well known and researched. And those 3 are β casein A1, β casein A2, and β casein B. So when we hear A1 or A2 milk, it is referred to the type of β casein it contains (β casein A1 or A2). Originally all cows produced A2 type of milk, and then happened genetic mutations and came in A1!

A1 beta-casein comes from the most common cow breed that originated in Australia, United States, and Northern Europe. Holstein, Friesian, Ayrshire, and British Shorthorn features A1 beta-casein genetic material. A1 beta-casein can be found on all commercially-prepared milk.

A2 beta-casein is protein found in milk produced by 'old-fashioned' or Desi cows like the Gir, Milk produced by other mammals such as those from human, goat, and sheep is similar to A2 dairy milk mainly due to the presence of proline

Desi cows are found not only in India but also in Africa and has almost 75 breeds that are found throughout both Africa and South Asia. Of which 30 are found only in India.

Why is a2 milk good for Indians.
